Power Nachos
From the Taste for Life test kitchen
10 minutes prep time | Serves 4 to 6
1 (10 oz) package baked multigrain tortilla chips
1 (16 oz) can fat-free refried beans
1 (4 oz) can chopped green chilies, drained
1-1/2 c reduced-fat Monterey jack, grated
1/2 c sliced black olives, drained
Salsa or guacamole, optional
1. Arrange tortilla chips on a microwaveable dish.
2. Spoon beans and chilies on top of chips, then sprinkle with cheese and top with olives.
3. Microwave on high for 90 seconds or until cheese melts.
4. Serve with salsa or guacamole if you wish.
